| Biography | | Dr. Paredes-Lopez is
Research Professor and Head, Lab. of Food Biotechnology, CINVESTA-IPN,
Irapuoto, Mexico. He is involved in the understanding, preservation,
improvement and rational utilization of indigenous crops. He has advanced the
use of technologies to generate maize, common beans, amaranth and cactus crops
with improved nutraceutical and functional qualities. His group has analysed
the nutraceutical contents of wild, cultivated and germinated Mexican common
beans, as also the functional properties of corn, banana and potato starch
blends, and their storage stability. He has also been studying the safety of
transgenic foodgrains, and has found that transgenic maize with amarantin is
not an important allergenicity inducer, just as non-transgenic maize. He is
Pres. of the Mexican Academy of Sciences and Founding Member of the Intl.
